I often cook meatballs because they make great leftovers. They reheat well and only get better with time.
My trick is to bake them in a mini-muffin pan. Baking allows me to do something else around the house while the meatballs cook, instead of babysitting them while they’re browning on the stove. Also, the muffin pan is easy to clean.
The Internet is full of meatball recipes. My Google search turned up over 2 million.

The flavor combinations are endless. Pick the ground protein of your choice, add minced veggies and some spices and you never have to have the same meal twice.
